Fenugreek

Fenugreek (methi) is a strongly aromatic, slightly bitter spice used in both seed and leaf form to add depth and a gentle bitterness to Indian curries, dals, pickles, and spice blends. The seeds are usually tempered briefly in hot oil or ghee, while the fresh or dried leaves are added towards the end of cooking to give a distinctive, savoury flavour and aroma.
