Mustard

Mustard seeds are tiny black, brown, or yellow seeds used mainly for tempering (tadka) in Indian cooking, where they are added to hot oil until they crackle and release a nutty, pungent aroma. They flavour dals, vegetable curries, pickles, chutneys, and rice dishes, and ground mustard or mustard paste is also used in regional specialties like Bengali mustard fish and various marinades and salad dressings
