Poppy seeds (khus khus) are tiny, nutty‑flavoured seeds used in Indian cooking to add richness, thickness, and a delicate crunch to dishes. They are often soaked and ground into a paste for creamy kormas, kurmas, gravies, and Bengali dishes like aloo posto, and are also used in sweets, payasam, and baked items for extra body and flavour.
