
Sajeera / Caraway Seeds
Sajeera usually refers to shahi jeera / caraway seeds, a fragrant spice that looks similar to cumin but is thinner, darker, and has a sweeter, slightly anise‑like aroma. It is used in biryani, pulao, rich curries, and garam masala to give a mild, warm flavour and delicate fragrance, often added towards the end of cooking so it doesn’t turn bitter.
